Tucked beneath Svanen, D.G.Æ. [Den Grimme Ælling] sits in what was once the laboratory of a 19th-century apothecary. While the space upstairs remains preserved, the basement takes a different direction.
D.G.Æ. acts as the counterpart to Svanen. Where the main bar is composed and rooted in history, the basement leans into a more experimental and future-facing identity. The concept is built around contrast, using subtle references to science and taxonomy to shape both the space and the menu without becoming overly literal.
The interior design, developed by Julia Filippova, reinforces this shift. The space moves away from the refined heritage above into something more raw and unconventional, balancing a lab-like atmosphere with softer, more organic elements.
The beverage program follows the same approach. Conceptual in structure, but focused on balance and execution. Cocktails sit within a broader narrative, with names like The Ugly Duckling, Cygnet, and Wander, while the overall direction leans into experimentation and resourcefulness. Ingredients and processes reflect a considered use of what’s available, rather than excess.
Presentation is part of the experience, but integrated. Lighting, surfaces, and table interaction all play a role in how the drinks are perceived.
Rather than competing with the space above, D.G.Æ. works as a continuation of the same story. A different layer, with its own pace and perspective.
A bespoke Tayēr-based setup built around a central island and front line, adapted to the space and service flow.
