Nutmeg & Clove is a celebrated cocktail bar and restaurant that has long stood at the intersection of heritage and innovation. Founded by Colin Chia in 2014, the venue tells the story of Singapore through food, drink, and atmosphere, reinterpreting familiar flavours and cultural references with a thoughtful, modern touch. Menus are always thematic, rooted in local ingredients and stories, with playful cocktails like the Laksa Martini or SG Scotch Egg that evoke both nostalgia and curiosity.
Now in its tenth year, Nutmeg & Clove continues to push boundaries while staying grounded in its original mission: to celebrate Singapore’s rich cultural tapestry through hospitality.
When the team visited our office in Oslo, we were honoured to collaborate on their new bar station. Designed as a custom configuration based on our Paloma system, the unit features a shared ice well between two working positions, with a dedicated wash area built into one side. Additional details were adapted to suit the team’s workflow and menu ambitions, an effort to support a bar programme consistently ranked among the world’s best.
