From the beginning, the station wasn't conceived as a collection of equipment, but as a workspace that could support Atman's style of service.
Together with the team, we developed a fully customised Paloma × Tayēr hybrid station, combining open guest interaction with the flexibility required for a high-volume cocktail programme.
Two wash stations, dedicated preparation areas, an extended Tayēr ice well and integrated refrigeration were carefully arranged around the team's natural workflow, allowing every movement—from building drinks to service—to happen with intention.
One detail Pau repeatedly returns to is accessibility.
Ice, bottles and chilled glassware all have dedicated positions within immediate reach, reducing unnecessary movement while keeping the station visually clean throughout service.
"Ice needs to be fresh, accessible and fast. The bottles need to be exactly where you need them. Those small details make a huge difference during service."
Perhaps the feature the team appreciates most is the integrated cooling system, allowing glassware to be stored at different temperatures depending on the drink being served.
It's a technical detail that quietly disappears into service, but one that contributes to the consistency Atman strives for every night.
